Tomato sauce


TOMATO SAUCE (for pasta)
serves: 3-4

1 kg - 1,5 kg ripe tomatoes
1 onion
3-4 garlic cloves
drop of olive oil
salt, pepper, spices to taste
pinch of sugar
fresh basil leaves


Wash and prepare your veggies.


Cut tomatoes in chunks and remove seeds. Chop onion and garlic.
Heat a drop of olive oil in an iron-cast skillet (one that allows slow cooking) and lightly stir-fry onion and garlic. (you can also add some leek in there). Then add chopped tomatoes, season to taste, stir, cover the skillet and let it cook for at least 20 minutes, stirring occasionally. The longer you cook it, the better (I must have cooked it about an hour). Add a pinch of sugar for sweetness and chopped basil leaves.

Serve hot on pasta (we used home made).

If you like, you can blend the sauce before serving to obtain a smooth consistence (we prefer it that way!).
