Take 3 ripe bananas that were awaiting the arrival of the blender that never showed.
And take one hungry (almost) vegan girl at dinner time.
Smoothie is a no-go, she needs something more.
Something like this:
BANANA CAKE
serves: 1 smaller "cake", feeds about 4 for dessert
Preheat the oven to 180°C.
In a bowl mix:
200 g flour
1 baking powder
pinch of salt
4-5 table spoons sugar
In a separate bowl mix:
80 ml oil or melted vegan margarine
3 ripe bananas, mashed
a touch of water or soy milk, if needed
1 teaspoon of vanilla extract
Add dry ingredients to wet ingredients, stir to mix. Pour the batter in a greased baking tin or other shape and bake 35 minutes until golden brown, Check by inserting a toothpick into the center - if it comes out clean, the cake is ready.
Great for breakfast, too.
